My trip from Seoul back to Haneda was more a treat than I expected... I normally do not fly with JAL, however, after this trip, I may reconsider my choice of airline! Below I have attached a menu of the meal I received aboard JAL, along with photos of the little bite sized treats included within. Also, in lieu of peanuts, the normally sticky delight (that most foreigners would refer to as smelling like their dirty socks), NATO was served crunchy like peanuts. Once again, I highly praise JAL's culinary efforts and definitely suggest this flight for all voyagers traveling between these two cities.

During my last visit to Osaka for the Chateau Margaux wine dinner, I stayed at the Ritz Carlton hotel. Exhausted from a full day of cooking, I retired to my room and ordered room service so I could enjoy a bit of peace and quiet. To my surprise, the menu included a Cheese burger (of 120gms) for an amazing price of approximately USD 40! I was curious in discovering what kind of burger could be of such value, and so I ordered it. Thirty minutes later, a succulent aroma of a fresh beef pattie covered by melted cheese surrounded me. As I sunk my teeth into the slightly toasted bun, I was overwhelmed by pure deliciousness! The beef used for this dish is 100% Wagyu and simply melts in your mouth. After gobbling up the last morsels of this delightful burger I was almost tempted to order a second one regardless of how full I already was. I can only suggest to anyone who makes a trip to the Ritz Carlton Osaka to definitely order this treat from room service! Hats off to the chef for one of the best burgers I've every tried!

A little Xex on the Bund in Shanghai!
Introducing the newest addition to the Y's Table brands in Shanghai - a mini XeX will be opening along the Huang Pu River, taking over a section of the Kitchen Salvatore Cuomo terrace. The refurbished terrace will include a Champagne bar with a dedicated section to sushi, "sexy" gazebos for a more relaxed crowd, and of course stunning views of the river as a backdrop. This new concept in Shanghai will include several of the elements found in the XeX concept in Tokyo: Italian chic blended with Japanese finesse. The official opening of the mini-XeX will be in early June. Stay tuned!

Experiencing Sicily in Shanghai!
After two successful dinners in Japan (XeX-Atago, Tokyo & XeX Osaka) in collaboration with Chateau Margaux, yesterday night we hosted an evening with Sicilian wine maker (Settesoli) offering traditional regional dishes from the Italian island at the Pizza Salvatore & Grill in Y's Table, Shanghai. Together with Giorgio, (another) Salvatore and Andrea (all Sicilian natives) we created a traditional menu paired with 5 different wines.
My next wine dinner will be held at The Kitchen in Seoul on May 28. Being Italian, I can never have enough wine, so I raise my glass to you all and look forward to receiving your comments on the photos attached from the previous 3 dinners!

Word of advice: DO NOT take the plane from Osaka to Shanghai (as Osaka has been recorded to have the highest number of swine flu cases)... Probably easier to fly in from Tokyo...

Gala Dinner at XeX Osaka(Chateau Margaux)
One of the glories of working in the food and beverage industry is being able to savor celebrated wines from around the globe! This week, I was privileged enough to spend two days (May 19 at XeX Atago, Tokyo and May 21 at XeX Osaka) surrounded by the tantalizing aromas of several of Chateau Margaux’s splendid vintages ranging from 1989 to 2006.
My personal favorite was the Chateaux Margaux vintage1999 that accompanied the Grilled Tuna & Foiegras whit Lentil . Although I was working meticulously in the kitchen, this did not prevent me from stealing a few sips of the succulent nectar offered to me by Monsieur Potailler. On the whole, our two wine pairing dinners were a great success, and I am already looking forward to our next venture with our friends from the house of Chateau Margaux. I conclude today’s blog by sharing with you, one of my favorite quotes:
