A.V.P.N. in Brazil/ブラジルのA.V.P.N

The first project about Real neapolitan pizza started in Brazil. The partener of it are the Chambre of commerce of Naples, the Agricoltural office of Campania, the Chambre of commerce italian-Brazilian and of course our AVPN. The main step of the Project is the two training concerning the art of making real neapolitan pizza; the first started on the 30th of november in San Paolo and is held by Our Chef pizzaiolo Giulio Adriani and the second is going to start on the 7th of december in Rio de Janeiro and will be held by Peppe Miele, the famous VPN delegate for Americas. The training will be shown in two Food University. Other parts of the project will be typical campania products promotion and export in Brazil and a gastronomic tour in Naples, called "Crazy about pizza" that provide tour of the factory and Historical neapolitan Pizzerias. All this feature will be discussed in a Press conference that will be held in RIo de Janeiro with Raffaele di Luca, President of Chambre of commerce italian-Brazilian, Vito Amendolare managing director of the mail italian farmer organization Coldiretti and Giuseppe Caravelli managing director of VPN Srl.

Meanwhile in Naples "Pizzafest 2010 preview", Gatronomic Kermesse at the Congress center "Mostra d'oltremare" from the 4th to the 8th of december. All the product of the land will be exposed in the exhibition and our Association will be there with a Pizzanapoletanaintour Container that will serve real neapolitan pizza to the visitors. All the money collected for the tickets will be devolved for charity.

...and in Japan our Our Master Pizza Chef Gaetano Fazio is going to pay a highly satisfactory visit to the new seven pizzeria we will be member of the VPN Japanese Division in 2010. Counting on his great good will and along with evaluation forms, Gaetano visited each of the applying members, together with Japanese delagates Nishikawa and Watanabe. Once those items that do not comply with our rules will be modified, they will finally, be able to become members of our great Association...

So, we are very very proud to be involved in so many events all around the world with people who love tha neapolitan pizza (A Special thanks to all the People involved in the Event), and it's a good deal with the great projet of AVPN for 2010, first of all the STG certification that will probably be approved on the next 9th of december by the European Commision in Bruxelles: great feats for a great Association!!

真のナポリピッツァについてのプロジェクトはブラジルが最初でした。そのプロジェクトの パートナーはカンパニア週の農業事務所で、ナポリの貿易のシャンブルです。イタリアとブラジルの貿易ともちろんわれらのAVPNのシャンブルです。このプ ロジェクトの大きなステップは、真のナポリピッツァ作りに関して2つのトレーニングをすることです。一つはサンパウロで11月30日にスタートしたもの で、それは我々のシェフピッツァイオーロのジュリオ・アドリアーニが開催したものです。そしてもう一つはリオデジャネイロで12月7日にアメリカのVPN の代表であるピッペ・ミエーレによって行われます。その指導は2つのフード大学で行われます。このプロジェクトの他の活動は、代表的なカンパーニャの製品 のプロモーションやブラジルへの輸出、"crazy about pizza(ピッツァに夢中)"といわれているナポリへの料理ツアーです。そのツアーでは工場やナポリピッツァの歴史を案内します。これらについては全て イタリアとブラジルの貿易のシャンブルの代表であるラファエッレ・ディ・ルカ氏とメールイタリア農業組合の最高経営責任者のビート・アメンドラーレ氏、VPN Srlの最高経営責任者であるコルディレッティとジュゼッペカラヴェッリ氏も同席されていたリオデジャネイロで開かれた記者会見で議論されています。

ナポリでは12月4日から8日まで"Pizzafest 2010プレビュー"とケルメスの調理法が"Mostra d'oltremare"国際会議場であります。その土地の全ての製品がその展示会で披露され、我々の協会が訪問者のために真のナポリピッツァが提供されるナポリピッツァツアーコンテナとともに行くでしょう。チケット料金は全てチャリティーのために収集されます・・・

そして日本ではわれらのマスターシェフ、ガエターノ・ファツィオ氏は2010年、VPN日本部門のメンバーに成るであろう新しい7つのピッツェリアを訪れ、高い満足度を得るでしょう。彼の素晴らしい評価方法に沿って集計し、ガエターノはメンバーに応募しているそれぞれの店を日本の代表である西川氏と渡辺氏とともに訪れる。我々のルールに従わなければ、我々の素晴らしい協会のメンバーになることは出来ません・・・。

なので我々はナポリピッツァを愛する人々とともに世界中で沢山のイベントを開催することを誇りに思っていますし(イベントに参加してくれた人たちにとても感謝しています)、まず第一に12月9日にブリュッセルのヨーロッパ委員会によりたぶん認可されるSTG証明が2010に向けてAVPNの素晴らしいプロジェクトになったと思います。偉大な協会の偉大な功績です!

Return to Japan.../日本に戻ります・・・

I am now waiting in the airport lounge at the Hongqiao Airport in Shanghai to return back to Japan where I will be staying for only 3 days before flying to Seoul for 2 days and then flying back to Shanghai.  I strongly believe that I spend more time on airplanes than the average flight attendant or pilot.  I've surely done enough miles/hours to become a pilot, though I wouldn't recommend taking any plane that falls under my command...  This time, I'm taking Shanghai airlines whose food is far from edible.  So I'm filling myself with little packs of peanuts and crackers found in the lounge. Not such an appetizing way to start the day.

僕は今、日本に帰るために上海のホンチャオ空港のラウンジにいます。今回は3日間日本に滞在し、その後ソウルに2日間行き、そして上海に戻ります。思うのですが、きっと僕はフライトアテンダントやパイロットよりも飛行機ですごす時間が長い気がします。僕はおそらくパイロットになれるくらい何マイル(時間)も乗っていますが、私の操縦する飛行機に乗ることはおすすめしません。今回は食事があまり好みではない上海空港を使っています。だからラウンジで見つけたピーナッツやクラッカーの小さなパックで我慢しています。こんなもので一日が始まるなんて。

Tonight, I was feeling rather lazy and decided to take a break from the kitchen...  I ordered cliche Chinese (Cantonese to be more precise) take-out from one of my preferred restaurants: Queen Mudanting (in Pudong) through Sherpa's.  Some of my favorites are pictured above: Pork & Zucchini, Gong bao Chicken (nice and spicy!) and Stir-fried vermicelli w/ sliced pork and mushrooms.  All in all, it made for a very pleasant and easy meal in the comfort of my own home here in Shanghai...

N.1 Pizza group in Japan: Pizza Salvatore Cuomo (Oricon chart)

Unfortunately, as I recently caught a severe cold, I was unable to fly back from Shanghai to Tokyo to receive the Oricon award for the Best Pizza Delivery Company in Japan.  However, Mr. Onishi (the world champion for pizza and one of the Directors of Salvatore Cuomo Japan) went to receive this honorary prize in my stead.  Oricon is a certificate / rating company for everything from artists to books to companies etc... in Japan.  The final ranking is accumulated from polls taken from fans, customers and consumers around the country.

今回僕が上海で風邪を引いていて・・・日本には帰れなかったので、代わりにアワードに大西さんが参加しました。今回のアワードはご存知のオリコンから選ばれました・・・

Shocking but its the truth...(Dried Dog Meat for Hot Pot)..MAMMA MIA!!!!

A few nights ago, I was walking down one of Shanghai's smaller streets when I came upon what seemed to be a rather popular hotpot restaurant.  Just outside the shop, I saw the usual laundry load hanging out to dry on a section of sidewalk for all to see... 

But what really caught my eye, was this unusual image you see above of a salted dried meat hung alongside the laundry...  Of course, anything related to food always captures my interest and so I took a closer look to further understand the Chinese culinary customs.  As I approached the meat, initially I thought it may have been the leg of a rabbit, but as I got closer I realised the leg was relatively larger...  Even compared to that of a cat's...  I finally managed to communicate with a gentleman standing near by to find out that this meat was in fact that of a dog's!!  I was horrified (as I am a dog lover - as in the pet), but remained polite and asked what it was used for.  The man pointed his finger towards the hot pot restaurant... 

Apparently, in China, dog meat is consumed particularly in winter time to "heat" the body (keep it warm).  It is often consumed in hot pots or in stews.  For those of you who do not wish to make the mistake of ordering dog (as I may have without knowing it!), look out for the following characters or descriptions in menus when visiting some local restaurants in China ("dog meat" may not always be so plainly written):

1) Xiang rou (香肉): fragrant meat

2) 3-6 xiang rou (三六香肉): in Cantonese refers to 3+6 = 9. The number 9 and dog in the Cantonese language are homophones.

3) Di yang (地羊): means mutton of the earth

I must articulate that NOT ALL Chinese eat dog meat.  In fact, in Shanghai it is rather rare to find a restaurant or a Shanghainese person that eats anything besides pork, beef, chicken and fish.  Most cringe when asked if they've ever tried dog meat.  The areas in China where dog meat is consumed are the Northeastern, Southern and Southwestern parts.   

For our culture we may find that eating dog is an atrocity, but we must remember that we all have our culinary differences, and at the end of the day, a meal is a meal.  After all, not so long ago, people used to think the Japanese were crazy for eating raw fish...  Now it is has become a trend! 

非常にショッキングな話・・・上海で鍋専門店の店の前を通ったときのことです・・・何かが洋服と一緒に干してあると思ってよく覗いてみたら・・・最初はウサギかと思っていました・・・しかしだんだんとそうじゃないことが分かってきて・・・猫でもないとすぐ分かりました・・・ちゃんと聞いてみたら赤犬の肉といわれました・・・さすがに何でも食べる僕でも引きました・・・犬だけは無理!!しなしながらこれはかなり普通みたいなので・・・上海の鍋屋にいったら何が入ってるのか良く聞いてから召し上がった方がよさそうです・・・

Shabu Shabu dinner.../しゃぶしゃぶディナー・・・

Today I am having dinner with a bunch of friends at a friend's home and we are enjoying a delicious shabu-shabu dinner.  I prepared a home made sesame sauce (goma tare) that consists of sesame paste, mirin, salt, sesame oil and some of the shabu-shabu soup.  To enhance the overall flavor, I also like to add some mentaiko (marinated roe of Pollock) to the sauce for a bit of a kick.  Now is the perfect season for a heart warming shabu-shabu to keep the chill of winter at bay!

今日僕は仲間たちと友達の家で、美味しいしゃぶしゃぶディナーを食べました。僕は自家製(胡麻ペースト、みりん、塩、ごま油、しゃぶしゃぶのスープの入った)胡麻だれを試しました。僕は風味を高めるため、パンチをだすために、明太子(辛子明太子)を入れるのが好きです。今、寒い冬を吹き飛ばすために体が温まるしゃぶしゃぶを食べるのがぴったりのシーズンです!

Since the launch of our bento delivery here at the Y's table Shanghai, I have been eating a bento every day (that makes 4 days in a row)...  This one in particular has been a favorite of our loyal Japanese clients - the Nori Bento (seaweed bento) which includes fish croquette, meat croquette, mentaiko (marinated roe of Pollock), seaweed and rice.  Keep the orders coming!! And Buon appetito!!
